What you need

  1. A baking tray
  2. Greaseproof paper
  3. Biscuit cutters
  4. The biscuits:
  5. 100g unsalted butter, softened at room temperature
  6. 100g caster sugar
  7. 1 medium free-range egg, lightly beaten
  8. 275g plain flour
  9. 1 tsp vanilla extract
  10. To decorate:
  11. 400g icing sugar
  12. 3-4 tbsp water
  13. 2-3 drops food colourings

Intro

Did you know 29th May is National Biscuit Day? Yummy. What an excellent excuse to roll up our sleeves and bake! If the sun is shining (fingers crossed), we can take our creations out into the garden and enjoy them with a nice cup of tea.

Of course, there are hundreds of tasty recipes out there but here’s a simple vanilla one that tastes delicious. It makes 24 biscuits, but you can multiply or divide the amounts if you want to make more or less.

The Activity

  1. Preheat the oven to 190C/170C fan/gas 5
  2. Line a baking tray with greaseproof paper
  3. Cream the butter and sugar together in a bowl until creamy
  4. Beat in the egg and vanilla extract, a little at a time, until smooth
  5. Stir in the flour until the mixture turns into dough
  6. Roll out the dough on a lightly floured work surface, so it’s 1cm (½ inch) thick
  7. Cut shapes out of the dough with the biscuit cutters and carefully place them onto the baking tray
  8. Bake for 8-10 minutes or until pale golden-brown
  9. Set aside to harden for 5 minutes, then cool on a wire rack
  10. For the icing, sift the icing sugar into a large mixing bowl and stir in enough water to create a smooth mixture. Stir in the food colouring
  11. Carefully spread the icing onto the biscuits using a knife and set aside until it hardens
