What you need

  1. 90g of softened butter
  2. 90g of brown sugar
  3. 100g of sugar
  4. 1 small egg
  5. ½ tsp vanilla extract
  6. 100g of canned pumpkin
  7. 120g of plain flour
  8. 45g of oats
  9. 85g of chocolate chips
  10. ½ tsp of baking powder
  11. ¼ tsp of salt
  12. ½ tsp cinnamon
  13. Baking tray
  14. Baking sheet

Intro

The autumn harvest brings an abundance of delicious and nutritious fruit and vegetables, from apples and cranberries to beetroot and, of course, pumpkin. These giant orange beauties are synonymous with this time of year, especially when they’re carved into spooky Halloween lanterns. Beyond savoury stews and soups, they also make delicious sweet treats too – like in this recipe.

This recipe makes 30 scrumptious cookies.

The Activity

  1. Preheat the oven to 180°C or gas mark 4
  2. Cream together the butter and both sugars until they’re light and fluffy
  3. Beat the egg and vanilla extract into the mixture
  4. Add the pumpkin and beat it in too
  5. Take another bowl and add the flour, baking soda, cinnamon and salt, then whisk together
  6. Gradually add the flour mixture into the creamed mixture and fold together
  7. Lastly, add the oats and chocolate chips, and stir
  8. Put the baking sheet onto the baking tray
  9. Scoop heaped tablespoonfuls of mixture onto the baking sheet evenly apart, allowing space for them to spread when baking
  10. Bake for about 10-12 minutes, until they’re lightly browned
  11. Remove to cool and enjoy with a nice cup of tea or coffee
