What you need

For 12 cakes

  1. 100g caster sugar
  2. 100g soft butter
  3. 100g self-raising flour
  4. 2 eggs
  5. 1 tsp of vanilla extract
  6. Paper cake cases

For the icing

  1. 200g soft butter
  2. 200g icing sugar
  3. Food colouring (optional)
  4. Chocolate sprinkles
  5. Marshmallows
  6. Jellies

Intro

Baking is a lovely activity – and this simple yet delicious recipe can stir up wonderful memories of making cakes with the family.

The recipe will make 12 cakes, but for more tasty treats, just double the ingredients.

 

    Top tip

    Those at a sensory level may enjoy watching the cakes being made and be there for the tasting once baked and iced.

    The Activity

    As this is an exploratory activity, we suggest you weigh out the ingredients beforehand and pop them in labelled containers.

    1. Preheat the oven to 180°C/160°C gas mark 4
    2. Take a 12-hole baking tray and ask one person to line these with paper cases

    Let everyone take it in turns to complete these steps of the mixing process:

    1. Mix the sugar and butter together in a bowl until the consistency is smooth
    2. Gradually sift in the flour and mix well (two people can work together on this)
    3. In a separate bowl, break the eggs and mix gently
    4. Add eggs to the mixture and mix together well
    5. Spoon the mixture into the cake cases, dividing evenly
    6. Bake for 20 minutes
    7. While the cakes are baking, start to prep your icing
    8. Mix the butter and sugar together until light and creamy
    9. If you’d like, add a few drops of food colouring
    10. Set to one side until the cakes have baked and then cooled
    11. Spread the topping on the cakes or use a piping bag to decorate them
    12. Top with marshmallows, sprinkles or jellies
    13. Serve with a cup of tea, and then save for an afternoon treat!
